Our story

It started with a fire and an idea

Since 2012, Pi~ Artisan Pizza has been perfecting a thin-crust pizza with a signature crispy-crunch crust — Peter Michael Busichio's Italian-inspired answer to why pizza deserves better than heat lamps and delivery boxes.

Instead of opening another storefront, Peter took the fire to the people: our exclusive kamado-style cookers set up at farmers markets, food truck rallies, and popup events around St. Augustine. Every pizza is hand-rolled on site and fired to order while you watch — a few minutes on blazing stone, then straight to the peel and into your hands.

In 2026, Peter was featured as a chef at the St. Augustine Food + Wine Festival — but you'll still find him most weeks behind the stand, flour on his shirt, sliding pizzas into the fire.

Our dough & ingredients

Thin, blistered, and honest

Our dough starts with 00 flour and a fermentation process we've developed and refined ourselves over the years. We keep the specifics in the family — but the result is a crust that's thin, blistered, and full of flavor, with the crispy-crunch bite we've been chasing since 2012.

On top: our homemade signature marinara, fresh mozzarella and ricotta, Italian sausage, arugula and basil, real balsamic. We make every attempt to source locally and use only the highest-quality ingredients we can find — cooking at farmers markets means the produce stand is often right next door, so when something local is at its best, it ends up on a pie.

Our dough is made with 00 flour and rested using a fermentation process we've developed and refined ourselves — the details stay in the family, but the flavor speaks for itself.

Hand-rolled on site

Each pizza is hand-rolled on site by our team — no rollers, no press, no two pies alike.

Live fire

Pizzas hit a blazing ceramic stone in our exclusive kamado-style cookers, blistering the crust in minutes.

Fresh finish

Arugula, basil, balsamic, hot honey — the fresh stuff goes on after the fire, right before you.

Community & the market journey

A farmers market family

Pi~ grew up in St. Augustine's market scene — from a small white stand with a hand-painted purple sign to a fixture at markets, festivals, and food truck rallies across the area.

We're a family operation in purple shirts, and the markets are our neighborhood: the growers we buy from, the makers we set up next to, and the regulars who plan their Saturday around a hot slice. Supporting local isn't a slogan for us — it's the whole business model.
